چکیده

Fifteen micro-fermentation trials were conducted during the 2008 vintage harvest in the Valtellina (Northern Italy) viticultural area. During fermentation, the spectra were achieved in the near and mid-infrared region by a FT-NIR spectrometer and a FT-IR spectrometer, respectively. Samples were also analysed by using chemical methods to evaluate sugars (glucose and fructose), alcohols (ethanol and glycerol) and phenolic compounds (total phenolics, total anthocyanins and total flavonoids). The pretreated spectral data were processed using principal component analysis. After feature selection by the algorithm SELECT, linear discriminant analysis (LDA) was applied to spectral data as a classification technique, to predict the fermentation stage from initial to final phase. Moreover, partial least square regression was used to predict sugar content, ethanol, glycerol and phenolic compounds simultaneously. LDA results, characterised by a high percentage of correct classification (87% and 100% as average value in prediction for NIR and MIR spectroscopy, respectively), showed that samples belonging to a particular fermentation step could be correctly classified. Good calibration models for the prediction of the main compositional changes during alcoholic fermentation were obtained with both FT-NIR and FT-IR, suggesting that either instruments could be used to evaluate online and simultaneously these compounds in red wine.

Classification of Sparkling Wine Style and Quality by MIR Spectroscopy.

In this study, the suitability of attenuated total reflection (ATR) mid-infrared (MIR) spectroscopy, combined with principal component analysis (PCA) and partial least squares (PLS) regression, was evaluated as a rapid analytical technique for the classification of sparkling wine style and quality. Australian sparkling wines (n = 139) comprising a range of styles (i.e., white, rosé, red, Prosec...

A Review on the Role of Vibrational Spectroscopy as An Analytical Method to Measure Starch Biochemical and Biophysical Properties in Cereals and Starchy Foods

Starch is the major component of cereal grains and starchy foods, and changes in its biophysical and biochemical properties (e.g., amylose, amylopectin, pasting, gelatinization, viscosity) will have a direct effect on its end use properties (e.g., bread, malt, polymers). The use of rapid and non-destructive methods to study and monitor starch properties, such as gelatinization, retrogradation, ...

The role of visible and infrared spectroscopy combined with chemometrics to measure phenolic compounds in grape and wine samples.

The content of phenolic compounds determines the state of phenolic ripening of red grapes, which is a key criterion in setting the harvest date to produce quality red wines. Wine phenolics are also important quality components that contribute to the color, taste, and mouth feel of wines. Spectroscopic techniques (e.g., near and mid infrared) offer the potential to simplify and reduce the analyt...

Discriminant Analysis of Red Wines from Different Aging Ways by Information Fusion of NIR and MIR Spectra

Two different levels' information fusion of near infrared (NIR) spectra and mid infrared (MIR) spectra coming from red wines aged in different ways has been investigated. A total of 96 red wines, including 44 wines aged in oak barrel, 26 wines aged in stainless steel tank with oak chips and 26 wines aged in stainless steel tank, were analyzed. The NIR transmission spectra and MIR attenuated tot...

A Comparative Study Concerning Linear and Nonlinear Models to Determine Sugar Content in Sugar Beet by Near Infrared Spectroscopy (NIR)

This paper reports on the use of Artificial Neural Networks (ANN) and Partial Least Squareregression (PLS) combined with NIR spectroscopy (900-1700 nm) to design calibration models for thedetermination of sugar content in sugar beet. In this study a total of 80 samples were used as the calibration set, whereas 40 samples were used for prediction. Three pre-processing methods, including Multiplic...
